tangy lemon yoghurt cake
I've been in a bit of a blogging funk lately. Work has been consuming a lot of my energy, as I'm helping plan an event coming up really soon (events always take up so much brain space). However, the last two weekends have been amazing weather here in Canberra, causing me to get out of my winter shell and get moving outside. It's been lovely and I can't wait for a summer of barbecues, bike rides, home projects, family, sunshine and weekends away. Anyways, a bit of good weather does wonders for my mood, lifting my spirits and causing me to become a major busy body. I've had a sudden burst of creativity, so I'm pumped to keep writing and blogging about all things that get me feeling creative and inspired.
On Sunday, I made this lovely Lemon Yoghurt Cake. I'm not that adventurous when it comes to baking, mainly because I'm scared to branch out with recipes that are slightly technical, and also because I'm a lazy cook. I'll get there one day. This recipe is really easy, and I had all the ingredients on hand already. Plus, the only equipment I needed was my handy stick mixer with whisking attachment - bonus!
