spring strawberry cheesecake

Happy spring! The weather here in Canberra has been fantastic, and two long weekends in a row - bliss! I am seriously so keen for a long summer and what better way to bring in the warm weather with a gorgeous strawberry cheesecake. I am a big fan of strawberries, especially when they're cheap - and I don't know what's up with our cheesecake obsession at the moment. We're watching through all the seasons of Friends at the moment, and the episode when Rachel, Chandler and Joey eat the cheesecake off the floor sent us into a craving frenzy (late night Deliveroo anybody?)! Anyways, I realised that I'd actually never made a cheesecake before. This no-bake cheesecake recipe (complete with how-to-video for rookies like me) is so easy and low in sugar too (bonus). The fresh strawberry flavour was definitely the star. A perfect addition to my spring recipe repertoire for barbecues and family gatherings. I love the idea of topping it off with some seasonal fresh blooms for extra wow-factor.
